It seems that people arte finally being educated or at least informed of exactly WHAT gluten free is lately. Anyone else notice there are more gluten free items in grocery stores and restaurants?

For some reason I have trouble with gluten free flour browning

when I make something like breaded fish or chicken in a skillet. I wonder why this is? I haven't had any trouble with the recipes I have used before and the only thing different is the gluten free flour instead of the regular white flour. Hmm..

My bread mixes have mostly worked out-and they brown just fine. I made Bob's Red Mill bread in a bread maker the other day and it was really good. Now at least I have full size pieces for when I have sandwiches. YAY!

Found a food to satisfy my sweet cravings!

Made up a batch of Pamela's Products "Chocolate Chunk cookie mix" today and BOY is it ever YUMMY!! It tastes just like a Toll House cookie! It was very easy to make, just add an egg and a stick of butter, mix and bake.

I will be trying her other mixes soon as well. I really need a bread mix so I can have full sizes of bread for my sandwiches again. All the breads I have found ready made are TEENY slices.

I'm BAACK and on track to be gluten free again

I'm finally somewhat settled into my new house and am trying to get back on track with eating right. I made gluten free gravy today with a GREAT mix of: 4 TB butter, 2tsp Bette Hagmans 4 flour blend mixed with 2C water and 2tsp Orrington Farms bouillon. YUM!!!

I do find I need something sweet now in the evenings though, so I need to do some shopping. It's interesting getting used to the stores up here. The best one for Gluten free and health food seems to be a Kroger store-Hilander. They carry bake mixes, cookies, some frozen foods, and cereals which I can't live without.. :-)

sorry I haven't posted in a while..

We moved, so I was packing like a madwoman and now am UNPACKING LOL! I will be back to my gluten free blogging soon!

I will say that all the eating out in the past couple weeks has been hard-I was tempted to eat things that aren't good for me. It's hard to eat gluten free out in fast food restaurants.

Check out the terms that may mean wheat is present..I had no idea on some of those..and having a restaurant card is a great idea!
